Fassolakia (Greek Green Beans and Tomatoes)

  1. 1 pound green beans
  2. 3 tablespoons extra virgin olive oil
  3. 2 medium onions, chopped
  4. 1 garlic clove, crushed
  5. 4 teaspoons tomato paste
  6. 3/4 cup water
  7. 1 tablespoon chopped fresh oregano
  8. Salt and Pepper
  9. Finely chopped red bell pepper for garnish
  1. Trim ends of beans.
  2. Heat oil in large saucepan.
  3. Add onions and garlic and cook for 5 to 10 minutes until soft.
  4. Add beans to onions.
  5. Mix tomato paste with water. Pour mixture over beans. Add more water if necessary to cover beans.
  6. Add oregano, salt and pepper.
  7. Cover pan and simmer 15 to 20 minutes until beans are tender
  8. Remove lid and boil to reduce liquid.
  9. Serve garnished with red bell pepper.
