Pureed Cauliflower

Are you trying to cut back on carbs and mashed potatoes are your weakness? This is a great substitute. Who knew cauliflower could be this good! I haven’t tried gravy on it yet but I’m sure it would be wonderful!

  1. 1 head of cauliflower
  2. 1 cup of chicken broth (for the vegetarian you can substitute vegetable stock instead)
  3. 1 tbsp whipping cream (or for the lighter side half-n-half)
  4. 2 garlic cloves, minced
  5. 1 tbsp butter
  1. Begin by cutting up the head of cauliflower into florets. Place florets into a pot with 1/3 cup of chicken stock. Add minced garlic cloves. Cover pot and bring to a simmer. Simmer until cauliflower becomes soft, stirring occasionally and adding more stock as necessary. Once cauliflower is soft (making sure all stock has been absorbed or evaporated) place cooked cauliflower into food processor. Add the cream and butter to the food processor.
